Ingredients:

  • For the Steak:
    • 1 lb flank steak, thinly sliced (against the grain)
    • 1 tbsp soy sauce
    • 1 tbsp cornstarch
    • 1/2 tsp ground black pepper
    • 1 tbsp vegetable oil
  • For the Stir-Fry:
    • 1 tbsp vegetable oil
    • 1 medium onion, sliced
    • 1 bell pepper (red, yellow, or orange), sliced
    • 1 cup broccoli florets
    • 1/2 cup water or chicken broth
    • 1 tbsp soy sauce
    • 1 tbsp brown sugar
    • 1/2 tsp cornstarch
    • 1/2 tsp ground ginger
  • For the Spicy Mayo:
    • 1/2 cup mayonnaise
    • 2 tbsp sriracha (adjust for desired spice level)
    • 1 tbsp lime juice
  • For the Bowl:
    • 2 cups cooked white or brown rice
    • Sesame seeds, for garnish
    • Chopped scallions (optional, for garnish)

Directions:

Step 1

Marinate the Steak: In a medium bowl, combine soy sauce, cornstarch, and black pepper. Add the sliced steak and toss to coat evenly. Marinate for at least 15 minutes or up to 30 minutes.

Step 2

Prepare the Vegetables: Slice the onion, bell pepper, and broccoli florets.

Step 3

Make the Spicy Mayo: In a small bowl, whisk together mayonnaise, sriracha, and lime juice. Set aside.

Step 4

Heat the Oil: In a large wok or skillet, heat vegetable oil over medium-high heat.

Step 5

Cook the Steak: Add the marinated steak to the pan and cook for 2-3 minutes per side, or until desired doneness. Remove the steak from the pan and set aside on a plate.

Step 6

Sauté the Vegetables: Add another tablespoon of vegetable oil to the pan (if needed). Add the sliced onion and cook for 2 minutes, or until softened. Add the bell pepper and broccoli florets and cook for another 3-4 minutes, or until tender-crisp.

Step 7

Create the Sauce: Push the vegetables to the side of the pan. In a small bowl, whisk together water or chicken broth, soy sauce, brown sugar, cornstarch, and ginger. Stir the sauce into the pan and bring to a simmer. Cook for 1-2 minutes, or until the sauce thickens slightly.

Step 8

Assemble the Bowls: Divide the cooked rice among bowls. Top with the stir-fried vegetables, sliced steak, and drizzle with the sauce.

Step 9

Finish and Serve: Dollop the spicy mayo on the side of each steak rice  bowl. Garnish with sesame seeds and chopped scallions (optional).

Tips:

  • Serve the steak sliced thin for easier eating in the steak rice bowl.
  • Adjust the amount of sriracha in the mayo based on your desired spice level.
  • For a vegetarian option, replace the steak with tofu or tempeh, cubed and marinated in the same way as the steak for a delicious vegetarian steak rice bowl.
  • Feel free to add other vegetables to the stir-fry, such as snow peas or carrots.
