Butter Cake

Ingredients:

  • 1 ½ cups (226 grams) all-purpose flour
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • 1 cup (200 grams) granulated sugar
  • ½ cup (1 stick) unsalted butter, softened at room temperature
  • 2 large eggs, at room temperature
  • 1 teaspoon vanilla extract
  • ¾ cup (180 ml) milk, at room temperature
  • Powdered sugar for dusting (optional)
  • Fresh fruit (optional)
  • Glaze (optional – see recipe suggestions below)

Directions:

Step 1

Preheat the Oven: Get your oven nice and toasty by preheating it to 350°F (175°C).

Step 2

Prep the Pan: Grease and flour a 9-inch square baking pan. Alternatively, you can line the bottom with parchment paper for easier removal.

Step 3

Whisk the Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and salt. Set it aside.

Step 4

Creaming the Dream: In a large mixing bowl, cream together the softened butter and sugar until light and fluffy. This step is crucial for achieving that melt-in-your-mouth texture, so beat for at least 2-3 minutes with an electric mixer on medium speed.

Step 5

Eggstraordinary Addition: One at a time, beat in the eggs, making sure to scrape down the sides of the bowl after each addition.

Step 6

Flavor Boost: Stir in the vanilla extract for a touch of warm sweetness.

Step 7

Alternating Act: Here comes the magic! Alternately add the dry ingredients (from step 3) and the milk to the creamed butter mixture, beginning and ending with the dry ingredients. Mix until just combined, taking care not to overmix.

Step 8

Batter Up! Pour the smooth and luxurious batter into your prepared baking pan.

Step 9

Baking Bliss: Bake the cake in the preheated oven for 50-55 minutes, or until a toothpick inserted into the center comes out clean.

Step 10

Cooling Down: Let the cake cool completely in the pan on a wire rack before frosting or decorating.

Serving Suggestions:

  • Simple and Sweet: Dust the cooled butter cake with powdered sugar for a classic touch.
  • Fruity Delight: Top the cake with fresh seasonal fruits like berries, sliced peaches, or mangoes for a burst of color and flavor.
  • Glazing: For an extra layer of sweetness, drizzle the cake with a simple glaze. Here are a few recipe ideas:
    • Lemon Glaze: Mix powdered sugar with fresh lemon juice until a pourable consistency is reached.
    • Vanilla Glaze: Combine powdered sugar with milk and a touch of vanilla extract for a classic vanilla glaze.

Tips:

  • Ensure all your ingredients are at room temperature for even mixing and a smooth batter.
  • Don’t overmix the batter once you’ve added the dry ingredients. Overmixing can lead to a tough butter cake.
  • To test for doneness, insert a toothpick into the center of the cake. If it comes out clean with a few moist crumbs, your cake is good to go!
