Ingredients:

  • 4 boneless, skinless chicken breasts (around 1/2-inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 ½ cups panko breadcrumbs (or Italian-style breadcrumbs)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil (or vegetable oil)

Directions:

Step 1

Prep the Chicken: Place the chicken breasts between two sheets of plastic wrap and pound them gently with a meat mallet or rolling pin until they are about ¼-inch thick. This ensures even cooking. Season both sides generously with salt and pepper.

Step 2

Set Up the Breading Station: For easy assembly, create a breading station with three shallow dishes. In the first dish, place the flour. In the second dish, whisk the beaten eggs. In the third dish, add the panko breadcrumbs.

Step 3

Breading Magic: Dredge each chicken breast in the flour, coating it evenly. Dip it next into the egg mixture, letting any excess drip off. Finally, coat the chicken generously in the panko breadcrumbs, gently pressing to ensure they adhere.

Step 4
