Ingredients:

  • 3 cups chopped romaine lettuce (or a mix of your favorite greens)
  • 1 cup cooked and shredded chicken breast or lean ground beef (seasoned to your liking)
  • ½ cup shredded cheddar cheese (or your preferred cheese)
  • ¼ cup sliced pickles (dill or sweet, your choice!)
  • ¼ cup chopped red onion
  • ¼ cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar (or white vinegar)
  • 1 teaspoon dried oregano
  • ½ teaspoon garlic powder
  • Salt and freshly ground black pepper, to taste
  • Optional additions: crumbled feta cheese, sliced black olives, sliced bell peppers

Directions:

Step 1

Prep the Greens: Wash and dry the romaine lettuce (or your chosen greens) thoroughly. Tear or chop the lettuce into bite-sized pieces and place them in a large bowl.

Step 2

Assemble Your Flavor Adventure: Add the cooked and shredded chicken or ground beef, shredded cheese, sliced pickles, red onion, and cherry tomatoes to the bowl with the lettuce.

Step 3

Dress to Impress: In a separate bowl, whisk together olive oil, apple cider vinegar (or white vinegar), dried oregano, and garlic powder. Season with salt and freshly ground black pepper to taste. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.

Step 5

Customize & Devour: This recipe is your playground! Feel free to add your favorite deli meats, cheeses, and veggies. Crumbled feta cheese, sliced black olives, or bell peppers are all fantastic options. Serve immediately and devour your delicious and personalized Grinder Salad!

Tips:

  • For a heartier salad, add cooked and cooled pasta or orzo.
  • Leftover roasted vegetables can be added for extra flavor and nutrients.
  • If you prefer a creamier dressing, whisk in a tablespoon of mayonnaise or a drizzle of balsamic glaze.
  • Prepare the salad ingredients in advance and store them in separate containers. Assemble and dress the salad just before serving for optimal freshness.
