Ingredients:

For the Chicken:

  • 4 boneless, skinless chicken breasts (around 1-inch thick)
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 1 1/2 cups panko breadcrumbs
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper, to taste
  • Vegetable oil, for frying

For the Creamy Sauce:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • 1 tablespoon all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup milk
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded Parmesan cheese
  • 1/4 cup sour cream
  • 1/4 teaspoon dried thyme
  • Pinch of nutmeg (optional)
  • Salt and freshly ground black pepper, to taste

For the Topping:

  • 1 cup crushed potato chips

Directions:

Step 1

Prep the Chicken: Preheat oven to 400°F (200°C). Butterfly cut the chicken breasts by carefully slicing them and seasoning both sides with salt and pepper.

Step 2

Set Up the Breading Station: In three separate bowls, prepare your breading station. In the first bowl, whisk the flour with paprika, garlic powder, onion powder, and thyme. In the second bowl, beat the eggs. In the third bowl, combine the panko breadcrumbs.

Step 3

Breading the Chicken: Dredge each chicken breast in the flour mixture, then coat it evenly in the beaten eggs. Finally, press the chicken firmly into the panko breadcrumbs, ensuring complete coverage.

Step 4

Fry the Chicken: Heat enough vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken for 3-4 minutes per side, or until golden brown and cooked through. Drain on paper towels to remove excess oil.

Step 5

Make the Creamy Sauce: In a medium saucepan, melt the butter and olive oil over medium heat. Whisk in the flour and cook for 1 minute. Gradually whisk in the chicken broth and milk, stirring constantly, until the mixture thickens and simmers.

Step 6

Cheese Time! Remove the pan from heat and stir in the cheddar cheese, Parmesan cheese, sour cream, thyme, and nutmeg (if using). Season with salt and pepper to taste.

Step 7

Assemble and Bake: Transfer the cooked chicken breasts to a baking dish. Pour the creamy sauce evenly over the chicken. Top generously with crushed potato chips.

Step 10

Bake and Serve: Bake for 10-12 minutes, or until the cheese is melted and bubbly. Garnish with additional fresh herbs (optional) and serve hot.

Enjoy this Chicken Delight recipe! It’s a delicious and unique twist on a classic dish, perfect for any occasion.

Tips:

  • Don’t Overcrowd the Pan: Fry the chicken in batches to avoid overcrowding the pan, which can lower the oil temperature and result in soggy breading.
  • Marinating Option: For extra juicy chicken, marinate the chicken breasts in your favorite marinade for 30 minutes before breading.
  • Spice it Up! Add a kick to the sauce by including a pinch of cayenne pepper or a few dashes of hot sauce.
  • Pre-cooked Chicken Shortcut: For an even quicker preparation, use pre-cooked shredded chicken. Simply form the chicken into patties and proceed with the breading and baking steps.
