Ingredients:

For the Cake Layers:

  • 1 ¾ cups all-purpose flour
  • 1 ½ cups unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 ½ teaspoons baking powder
  • 1 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

For the Chocolate Fudge Frosting:

  • 1 cup unsalted butter, softened
  • ¾ cup unsweetened cocoa powder
  • 3 cups powdered sugar
  • ⅓ cup heavy cream
  • 1 teaspoon vanilla extract
  • Pinch of salt

Directions:

Step 1

Preheat the oven to 350°F (175°C) and grease two 8-inch round cake pans. Line the bottoms with parchment paper for easy removal.

Step 2

Whisk Dry Ingredients: In a medium bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt. Set aside.

Step 3

Cream Butter and Sugar: In a large bowl, cream together the softened butter and sugar until light and fluffy, using an electric mixer on medium speed. Beat in the eggs one at a time, then stir in the vanilla extract.

Step 4

Alternate Wet and Dry Ingredients: Begin and end with the dry ingredients, alternating with the buttermilk in three additions. Mix until just combined, scraping down the sides of the bowl as needed.

Step 5

Divide Batter: Divide the batter evenly between the prepared cake pans.

Step 6

Bake the Cakes: Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Let the cakes cool completely in the pans on a wire rack before frosting.

Step 7

Make the Chocolate Fudge Frosting: While the cakes cool, prepare the frosting. In a large bowl, cream together the softened butter and cocoa powder until smooth. Gradually add the powdered sugar, beating until light and fluffy. Beat in the heavy cream, vanilla extract, and salt until the frosting reaches a spreading consistency.

Step 8

Frost the Cake: Once the cakes are cool, place one layer on a cake plate or serving stand. Spread a generous amount of frosting over the top. Carefully place the second cake layer on top and frost the entire cake, including the sides.

Step 9

Serve and Enjoy: Slice and serve your delicious Matilda Chocolate Cake!

Tips:

  • For a richer chocolate flavor, use strong brewed coffee instead of buttermilk.
  • Top the cake with chocolate shavings, sprinkles, or fresh berries for extra flair.
  • Leftovers can be stored in an airtight container at room temperature for up to 3 days.
